Our menu evolves across four distinct quarters: seafood, vegetables, fermentation, and meat. Each is explored in full, then set aside to make way for the next.

Each quarter introduces a focused menu built around a single theme. A small number of dishes may carry over, but the emphasis shifts completely with the season.
